Basil (A Spice of Life)

One of my favorite spices happens to be basil
and I can attest to the fact that there are so many dishes that are enhanced
by its wonderful flavor and aroma. This delicate herb is right at home in tomato
sauces, soups, salads, pesto and even spread on hot bread with olive oil and
garlic.
In 2007, there are 4 new varieties I just cannot wait to try and I thought I
would share them with you.
The first variety is called Summerlong and just as its name implies
it has tons of fragrant new leaves throughout the summer growing season.
It is more compact than other basil plants and its leaves are both luminous and
dainty in size. However, do not be surprised to find it takes longer than most
seeds to sprout. This variety is best when dried before using.
The second new type is dubbed Cardinal. This particular variety dons
a red stem along with its wonderful green leaves and adds a dramatic touch to
any garden. It is very good used fresh as an herb butter or as an added flavor in
pasta dishes.
Third comes the Marseille that grows to a compact size of
approximately one foot. It does very well in containers as well as in your garden
bed and will keep you supplied with plenty of sweet leaves during the entire
growing season.
Last, but not least is the variety known as Siam Queen and it truly
is the queen of the basils if not all herbs. This plant is native to Thailand,
grows to about two feet in height and is used primarily in many oriental dishes.
In many ways, it does resemble the Cardinal variety except that its leaves are
smaller in size and a bit thinner and of course, its flavor is more intense than
other basil family members.
No matter which variety you may choose, I have little doubt that you
will be thrilled with the results of your efforts. First your nose will be in
for a real treat from your basil's aroma as it grows in your garden or in a
container on your porch or patio. However, harvesting the fruits of your labor
and using them in your favorite recipes is even more rewarding.
